1. The Easy Method – 20-Minute Chocolate Chip Cookies

Perfect for: Busy weeknights, baking with kids, or when you need cookies right now.

What You’ll Need:

  • 1 stick (½ cup) unsalted butter, softened
  • ½ cup brown sugar
  • ¼ cup white sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 ¼ cups all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 cup chocolate chips

Quick Steps:

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, cream butter and sugars until fluffy. Add egg and vanilla; mix well.
  3. Stir in flour, baking soda, and salt until just combined.
  4. Fold in chocolate chips.
  5. Drop spoonfuls of dough onto a baking sheet lined with parchment.

What You’ll Need:

  • 1 cup (2 sticks) unsalted butter
  • 1 cup brown sugar
  • ½ cup white sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 ½ cups chopped dark chocolate or chips

Step-Up Technique:

  1. In a saucepan over medium heat, melt butter. Continue cooking until it turns golden brown and smells nutty (about 4–5 minutes). Let cool slightly.
  2. Mix browned butter with sugars until combined. Beat in eggs and vanilla.
  3. Add flour, baking soda, and salt; mix until just combined.
  4. Stir in chocolate.
  5. Cover dough and chill for at least 1 hour (or overnight for more flavor).
  6. Preheat oven to 350°F (175°C), scoop dough onto a lined baking sheet, and bake for 10–12 minutes until golden on the edges.

Tip: A sprinkle of flaky sea salt before baking takes these to another level.

What You’ll Need:

  • 1 cup (2 sticks) cold unsalted butter, cubed
  • 1 ¼ cups brown sugar
  • ¾ cup white sugar

  • 2 tsp pure vanilla bean paste (or high-quality vanilla extract)
  • 3 cups bread flour (for a chewier texture)
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp fine sea salt
  • 1 ½ cups chopped high-quality chocolate bars (mix milk, dark, and semi-sweet)
  • Optional: ½ cup toasted pecans or walnuts

Gourmet Method:

  1. In a saucepan over medium heat, melt butter. Continue cooking until it turns golden brown and smells nutty (about 4–5 minutes). Let cool slightly.
  2. In a stand mixer, cream browned butter with sugars until light and fluffy (about 4 minutes).
  3. Add eggs one at a time, mixing well, then add vanilla bean paste.
  4. In a separate bowl, whisk bread flour, baking soda, baking powder, and salt. Add to wet ingredients and mix until just combined.
  5. Fold in chopped chocolate and nuts if using.
  6. Scoop large 3–4 oz portions onto a baking sheet, spacing well.
  7. Chill dough for at least 24 hours — this allows the flavors to develop and the texture to improve.
  8. Preheat oven to 375°F (190°C). Bake for 12–14 minutes, until golden brown with slightly gooey centers. Cool on the tray for 5 minutes before moving to a rack.

Tip: Press extra chocolate chunks into the tops of the cookies right before baking for that signature bakery look.
