A Recipe just for You!

March's recipe is a Mint Chocolate Whoopie Pie, perfect for St. Patrick's Day celebrations!

Mint Chocolate Whoopie Pie Recipe

For whoopie pies:

  • 1 2/3 cups all-purpose flour
  • 2/3 cup Dutch-process cocoa powder
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 stick unsalted butter, softened
  • 1 cup dark brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla
  • 1 1/4 cups buttermilk

For mint filling:

  • 3 cups powdered sugar, sifted
  • 2 sticks unsalted butter, softened
  • 1/4 teaspoon salt
  • 1/2 teaspoon peppermint extract
  • 1 to 2 tablespoons heavy cream
  • Green food coloring, optional

Instructions:

🍫 Make the Whoopie Pies

  • Preheat oven to 375°F. Line baking sheets with parchment paper.
  • In a bowl, sift together flour, cocoa powder, baking soda, and salt.
  • In a mixer, beat butter and brown sugar until light and fluffy (about 3 minutes).
  • Add egg and vanilla and beat until well combined.
  • Mix in half the dry ingredients, then half the buttermilk. Repeat with the remaining dry ingredients and buttermilk.
  • Batter will be thick and fluffy.
  • Scoop about 1½ tablespoons of batter onto baking sheets, spacing 2 inches apart.
  • Bake for 11 minutes, until tops look dry and spring back lightly when touched.
  • Cool 5 minutes on the pan, then transfer to a wire rack to cool completely.

🌿 Make the Filling

  • Beat butter and powdered sugar until smooth.
  • Add salt, peppermint extract, and the heavy cream a little at a time until desired consistency is achieved. Beat until light and creamy.
  • Add more cream if needed for smoothness.
  • Mix in green food coloring if desired.
  • 🧁 Assemble
  • Scoop or pipe filling onto the flat side of half the cookies.
  • Top with remaining cookies and gently press together.
