March's recipe is a Mint Chocolate Whoopie Pie, perfect for St. Patrick's Day celebrations!
Mint Chocolate Whoopie Pie Recipe
For whoopie pies:
- 1 2/3 cups all-purpose flour
- 2/3 cup Dutch-process cocoa powder
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 stick unsalted butter, softened
- 1 cup dark brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla
- 1 1/4 cups buttermilk
For mint filling:
- 3 cups powdered sugar, sifted
- 2 sticks unsalted butter, softened
- 1/4 teaspoon salt
- 1/2 teaspoon peppermint extract
- 1 to 2 tablespoons heavy cream
- Green food coloring, optional
Instructions:
🍫 Make the Whoopie Pies
- Preheat oven to 375°F. Line baking sheets with parchment paper.
- In a bowl, sift together flour, cocoa powder, baking soda, and salt.
- In a mixer, beat butter and brown sugar until light and fluffy (about 3 minutes).
- Add egg and vanilla and beat until well combined.
- Mix in half the dry ingredients, then half the buttermilk. Repeat with the remaining dry ingredients and buttermilk.
- Batter will be thick and fluffy.
- Scoop about 1½ tablespoons of batter onto baking sheets, spacing 2 inches apart.
- Bake for 11 minutes, until tops look dry and spring back lightly when touched.
- Cool 5 minutes on the pan, then transfer to a wire rack to cool completely.
🌿 Make the Filling
- Beat butter and powdered sugar until smooth.
- Add salt, peppermint extract, and the heavy cream a little at a time until desired consistency is achieved. Beat until light and creamy.
- Add more cream if needed for smoothness.
- Mix in green food coloring if desired.
- 🧁 Assemble
- Scoop or pipe filling onto the flat side of half the cookies.
- Top with remaining cookies and gently press together.
